You trap all the juices within the paper, so the chicken that comes out is extremely succulent and flavourful. It's also extremely oily.
If all of the juices are trapped in the paper,
surely he flavour wouldnt be in the chicken then ?
Within the paper.

It's greaseproof, so it keeps all of the juices and flavour inside, allowing it to soak into the chicken more

Ok

Does it only work with chicken or other meats ?

I don't see why it wouldn't work with other stuff.

I know there's paper prawns, but with those I think it's actually edible paper that you eat.

Are you a student or security guard or what? How comes you're always up and on here at these times of night? Insomniac? Speed freak?

For the curious :

Kaya ( also srikaya, means "rich" in Malay based on its golden color) is a jam made from coconut milk, duck or chicken eggs which are flavored by pandan leaf and sweetened with sugar. The spread originated in Southeast Asia, most likely Indonesia or Malaysia. This is reflected by its tropical ingredients santan and pandan leaf. Kaya is sweet and creamy, available as a golden brown or green colored spread depending on the amount of pandan and extent of carmelization of the sugar. As with other jams, kaya is typically spread on toast and eaten in the morning but is enjoyed throughout the day.

Very yummy.

Can't beat the Singapore kaya toast.

Look at the thoroughly toasted bread with loads of kaya and butter smeared all over the insides.
