Risotto is pretty easy.
I'd say of that lot the hardest would be the tuna.
I hardly ever cook it for myself, cos I always overcook it, and that just ruins it.
Since I git that food poisoning though, I always find myself thinking "Hmmm, maybe I'll just give it a little more".
Same goes for steaks, which as I like them twitching still - doesn't really work for me
