It's generally intestine I believe, although I think it can refer to any kind of offal.

Therefore - guts, heart, liver, kidney, etc.

Basically it's internal organs and shit.

It's nice, but it can get a bit chewy. I was eating some very nice tripe in Chinatown just yesterday as it happens

yes we chinese eat lotsa tripes

deep fried intestines are nice and crunchy
braised stomach are chewy

lovely

For the record, I hate intestines.

I've developed a craving for middle eastern food. Shish kebab, hummus, the likes. My throat has suffered as a result though.
