Well, from the time I started watching it definitely looked like Gravvy was at #6 and Jones st LCM - he would not arrive in the box for his goal otherwise. Gravvy looked very natural collecting the ball and progressing, also made a couple of nice tackles. Could he be an answer?

Better control will come from having midfielders who can actually control a ball under pressure, or drop a shoulder Rodri/Busquets style when pressured, and not have the ball run away from them.

Bajcetic is a potential midfield controller, but I kind of feel like he's 2-3 seasons away still from that. In the meantime, we do we spend 50m to get someone else in, who might block his progress? Or do we use Gravy/CJ/Macca there?

Macca is wasted as a 6. We saw the difference when endo came in and he moved further forward. Grav isn't good or strong enough for that role. Jones is ok but all would get dominated too easily against top opposition. Endo might not be technically good enough but he's still our best 6 right now.

He looked good this half. Hopefully, he can build on this going into the season.

Technical proficiency and good decision making is needed to better control games. Ironically, an excellent 6 in this system could have been someone like a healthy Thiago.
