You are literally complaining about the necessary consequences of stupid election law that Republicans advocated for. They didn't allow early tabulation of votes, so now you get hundreds of thousands of urban mail voting that is overwhelmingly democratic coming in at the same time.
They are reported in large batches. So you see jumps on both graphs. The jumps are overwhelmingly democratic because democrats tended to vote by mail more often pre pandemic, and did so sometimes at 8-1 ratios this time around, especially in cities.
