Saliba has the right to go for the ball, but it does not mean he has the right to take out the opponent. He didn't even get the ball, he *touched* the ball slightly, the ball continued the trajectory benefitting Joao Pedro, who was taken out.

No it doesn't. A player tackling, getting the ball but going strongly through the opposition player, is still going to commit a foul regardless of whether he got the ball first or not. He head butted him, that could have been very dangerous. Fouls are always given in the box for head on head.
