“She rang us and when we got to her she was in shock at what she had seen.
Mr Cowan said rumours a witness filmed the incident on a mobile phone instead of helping were “beyond belief”.
Mr Smith was taken by ambulance to the Royal but died a short time later.
Police said they know both victim and attackers had been in Bar Bodega, on Colquitt Street, before the violence.
Detectives believe there was “an altercation” inside that resulted in people being thrown out by door staff.
The fatal attack happened close to the neighbouring Chameleon bar where flowers were laid in tribute to Mr Smith.
Police are still appealing for anyone who was in Bodega to come forward.
A Home Office post-mortem set to take place yesterday had to be delayed and was set to be completed today to confirm the cause of death.
Police have said they do not believe the incident was football or gang-related or that Mr Smith knew his attackers.
Anyone with information should ring police on 0151 777 4065 or call Crimestoppers on 0800 555111.
Joseph Walker, 27, of Tintail Way, Heyes, Middlesex; Mark McEwen, 39, of Angel Park Garden, Brixton and Michael Samuels, 39, of St James’ Road, Croydon were due to appear at Liverpool magistrates court this morning charged with Mr Smith’s murder.
A fourth man, aged 33, was released by police and told he would face no further action.
